Easy Pasta Fagioli Soup

I threw this recipe together on the fly trying to think of something not boring that would go with porkchops and applesauce. 
After tasting it, I realized  it turned out so good, I figured I better write it down so I wouldn't forget it!!
Then I found a few recipes for "pasta" fazool"  that matched most of my ingredients. Who knew it was an actual dish!! Or at least my version. lol.

In less than 30 min. you can have an easy side dish, main dish or soup for lunch, dinner, or snack.

Easy Pasta Fagioli Soup

1 to 2 tbls olive oil to hot skillet
1tbls garlic minced
Quartered 6 to 8 san marzano baby tomatoes, (heavenly brand)
Diced 5 to 6 baby sweet peppers, 
You may also add mirepoix if you like :
1 large chopped carrot, 1 to 2 stalks celery chopped, 1/2 sweet onion diced. ((I've made it both with mirepoix and without, both are d-lish))
Italian seasonings to taste-
oregano, basil, rosemary, thyme, red pepper flakes, garlic powder, onion powder
Sautee all above till soft
Deglaze pan with:
1 to 2 tbls balsamic vinegar,
1 to 2 tbls sherry
Add
1 can cannellini beans ((may use kidney or northern beans))
1/3 lb broken spaghetti,
1.5 cups chicken broth
1cup boiling water
Boil till pasta is all dente, then stir in
4 to 6 oz fresh baby spinach
Salt, pepper to taste and serve.
